The summer heat has arrived! Wonderful heat-loving herbs like rosemary make these torrid temperatures more bearable. Consider growing rosemary in interesting shapes and topiary forms. Learn how much water they really need and see how I display them in my kitchen garden, the potager.

    Rosemary is my most favorite herb in the winter. I love to grow squash, my favorite is green striped cushaw. It will store well into May if we don’t consume it sooner. I cut the neck into half moons and coat with olive oil, then sprinkle lots of chopped rosemary and roast in the oven. Its also great to do the same with sweet potato cubes. I know, not cookies, but my favorite way to use it. I love your topiaries. I have some gorgeous trailing rosemary that grew in a large pot all summer under taro. I dug them up, potted and brought them in they are so architectural in their natural form. I know you’d love the look of them as well.

    toast raw cashews with finely chopped rosemary and some finishing salt. Allow to cool slightly and they magically crisp up. Addiciting

    Here’s a great recipe with rosemary. Sauté Medjool dates pitted and cut in half in a bit of olive oil preferably in a cast iron skillet on medium heat, add dried rosemary and good sea salt. These are good on the own or with soft goat cheese or cut up in a salad! Yum!

    Scones Lemon/Rosemary

    1 sprig rosemary
    1/2 zested lemon; 1 large zested + juice is lovely
    1 cup agave/maple syrup
    1 small granny smith pureed to applesauce
    2 teaspoons baking powder
    1/2 tsp baking soda
    1/2 teaspoon salt
    1 cup coconunt flour
    1cup almond flour
    1 cup all purpose bobs red mill gluten free flour
    1/4 cup coconut oil

    2 flax "eggs"
    1 tsp vanilla

    Blend everything together. The dough should stick together, add more flour until it all sticks together well. Pour out on parchment paper lined baking sheet and mould into a flat round loaf about an inch to two inches tall. Bake at 375 for half hour (it wont be done yet). Remove from oven and cut into 3×3 inch pieces. Separate each piece making sure the most doughy pieces are facing outward of the pan. Return pan to the oven and bake another 10-15 minutes until all the edges get a little hard/crusty.

    I’m so glad I found you because I think we live in similar climate conditions. I live in Houston, Texas. My rosemary is in a pine shape; i think it’s made up of three plants. I bought it during the holiday season. One side is browning. I keep hearing not to water it often bc it doesn’t like wet feet. My weather is hot. I’m so afraid of underwatering it. I just took it out of the pot because I saw a video saying that if the roots are still root bound, it’s not absorbing nutrients or water well. I think that might be the problem with mine. It’s still in the shape of the original pot, even though I put it in a slightly bigger one. I also found aunts, tiny black flies and tiny red insects around the roots. How can I save my rosemary? I’m going to attempt undoing the rootball a bit like I saw in the other video, but I want to water it right. I would appreciate your suggestions. Thanks.
