    My French tarragon came back too, and I am super excited. As far as I know, you cannot buy seeds for it … It must be started from propagation, which requires buying live plants, which can be a little pricey. I am on my third year, and I will definitely heavily mulch it in the fall, along with my rosemary, to get them to come back year after year. Good tip on the gravy … I love chicken in a white wine and mushroom sauce, a la Jacques Pepin. Add some French tarragon at the end.

    Savory…..also use with anything beans ( bean salad, compote, etc.) In Germany it is actually called "Bohnenkraut" (Bean Herb) because it’s mostly used with beans.

    Good afternoon Mark 😊 rather wet today but that’s OK as l did what l needed to do yesterday.What a lovely subject to talk about as lm a keen herb 🌿 grower.I chop up Rosemary quite fine and sprinkle it over roast potatoes about ten minutes before ready to come out the oven,so so delicious,hope you give it a try.Tarragon (French) fresh is wonderfully in a white wine and double cream sauce for chicken ….real indulgence and as for Dill l would grow it just to look at,such a beautiful plant,but l like pickling the gherkins l grow for for Christmas and give as a gift.Sage,lve had the same three plants for five years and come back bigger every year.So just a good trim and they are very happy with that,wonderful herb but quite strong in taste 😊 lm going to stop myself now Mark 🤗 could talk herbs,tomatoes any veg for hours lol.All the very best 🌱🌱🌱💕🇬🇧uk

    Awesome herb garden! The woodchips make it look neat and attractive. I have Sage, Basil, Peppermint, Spearmint and a huge Rosemary bush! Luv the scent of Rosemary.

    Do the wood chips not steal too much nitrogen from the soil? I keep hearing that in vegetable gardening videos, so I tend to use chopped straw.

    Winter savory (Satureja Montana) is a good substitute for pepper for people with a sensitive stomach.
    The leaves can be eaten fresh or cooked. They have a peppery taste. Savory is delicious as a seasoning in fish and meat dishes and especially when cooking beans.
    Because savory helps to stimulate digestion, it is a handy herb to add to heavier dishes such as stews.
    The taste is on the spicy side, can replace pepper, so should be used in moderation in cooking. It improves fatty meats, including pork, game, ragout, and facilitates the digestion of cabbage and beans. Goat and sheep cheese is perfumed with savory. In dishes, savory can be combined well with thyme, rosemary and bay leaf. Chop up a few young leaves in a salad, add a sprig in a bottle of vinegar or let young shoots cook with legumes at the end of the cooking time, these are small interventions that give your kitchen a Provencal accent.

    Mountain savory flowers with small white flowers and attracts insects such as bumblebees and bees.

    Great video! All of my favorite herbs. I like summer savory better than winter and dries great. Winter is allegedly hardy here in western wa, but didn’t carry over for me. Oregano is a thug and gets invasive for me (almost as bad as a mint/lemon balm) including the golden variety and I like flavour of dry mexican oregano better than fresh greek varieties (I time I like dried herbs better lol). Rosemary probably one of my favs. Trying lovage this year and cardoons (bought by mistake…thought I was getting artichokes lol.). Calendula is great as infused oil…I add it with curry plant (immortelle flowers) and use to make soap. Great for skin. Would love to see some harvest/preserving videos when you reap the harvest this summer and fall. Do you grow fruit trees?

    I found out the hard way that chives spread all over the place when the flower heads go to seed. The same is true for lemon balm. Great herb garden!!!

    Hi Mark!
    I love how you positioned all the herb and added color to it as well.
    Also i love the part about the Rosemary and how you can put the meat on the branches, that’s awesome and i realized that i"m actually growing them and didn’t even know it till i watched your video lol.
    Also about Pinching i will be trying that out with my Chrysanthemum and unfortunately in the last few weeks 2 of my Chrysanthemum’s got stolen, so that was unpleasant but i have more and hope they don’t steal them too.

    Is there a reason why the beds are 8 feet wide? Is this a maximum distance where you can work on the bed without stepping on it?
    Winter savory is really easy to grow. In Germany it is used with string beans, though the aroma is not as good as the summer savory.

    I yelped when you threw the French tarragon off to the side lol 🙂 For me it’s such a rare herb to get fresh and so hard to find because it can only be propagated! I just purchased two little trench tarragon plants that I am hoping expand and grow into the MASS that you have growing–very envious of that field of tarragon!! And glad that to see that it came back after winter. I am afraid [where I live] the ground freeze will kill the plant so i’m growing in pots long enough to propagate more to make sure I have enough plants before attempting to put them in the ground. French tarragon is so much more complex/intense than other types of tarragon like Russian or Mexican. It doesn’t compare. It’s delicious in eggs/scrambles and omelettes–no need to get fancy–and especially tarragon butter for topping steaks at the last minute. But the most complex and heavenly mix for french tarragon is called "fines herbes" combining chopped tarragon, chervil, parsley and chives (sometimes lemon balm, but it’s not totally necessary and I prefer it without for most things). Fines herbes is one of the best flavors I’ve ever had in my life. It goes well on chicken in a pan sauce or on lightly buttered pasta. I really can’t recommend trying out fines herbes enough–it has so many uses and the flavor is out of this world and completely unforgettable–that I literally dedicate half a raised bed in my garden just to making this herb mix. 🙂

    I would suggest letting your dill and cilantro go to seed. They definitely attract pollinators. And, they WILL come up again next year. Not necessarily where you want them, but ultimately, don’t we all love volunteer plants that require no effort? Worst case scenario – you yank them just like other weeds. For example, all my cilantro I started under grow lights is now beginning to bolt, but I have half a dozen plants that are coming up in my tomato beds and are not. I’m just going to let them keep growing.

    Outstanding! So do tell, HOW do you manage to keep rabbits, gophers and any other pesky creatures from gorging themselves on all of your hard work? The dogs cannot possibly be standing guard over these beds 24/7.

    Herbs are such a blast to grow, either ornamental, medicinal but esp. culinary…..i got into herbs about 1985 when an older woman introduced them to me…i know, you where not even a gleam in your fathers eye that far back lol…i really got back into them more this year with several scented geraniums/pelargoniums cultivars…i like them as much for ornamental as any perennial!!!!
