About Us.
I share our organic homestead, called Byther Farm, with my loving partner, Mr J and our cat, Monty.
We are a fifty-something couple who live on a smallholding in Monmouthshire, Wales. We are going green and creating a gentler, cleaner and more healthy life for our family.
There is a large organic kitchen garden with no dig gardening raised beds and young food forest in which to grown our fruit and vegetables.
I’m currently exploring permaculture farming as a way of life.
We keep hybrid chickens and also have breeding flocks of Jersey Giants and Australorp chickens and Aylesbury ducks.

    Hello, is there a perennial rosemary? Here in Ontario is cold so not sure if there is an specific Rosemary for this climate

    As soon as you spoke about sweet cicely my ears pricked up, paused the video and went googling (hence why i spelled it right lol)… watched a video from edible acres who talk about it’s uses in quite some detail and now i’m super excited to get some growing for next year. You’re a regular source of inspiration.

    Great video Liz. I’m in the process of creating a large perennial herb bed. I just bought a sweet cicely plant to use with rhubarb, it’s doubled in size in a week! My favourite is chives, tasty and pretty 🌺

    I have a few favourites.. Rosemary, great with almost anything cooked, Mint with new potatoes and lots of other things, Tarragon with fish and chicken… where do you stop, corriander, parsley, basil.. the list goes on.

    I know how eat bay trees are, I say tree because it was bigger than my house and as it was so close to the house I had to dig it out might try to put a small one back in a large pot πŸ˜‚

    I was taught to chew the fresh green seeds of sweet cicely for a sweet aniseedy treat. I bring them back from my allotment for my kids to share.

    Nice work with the bee Liz! My favourite herbs – wild thyme (for making broth, chicken dishes, roast veg), rosemary (roast veg), dill (pickles), parsley (for lots of things), leaf celery (soups & stews). I have grown sweet cicely in the past but found it very invasive. Too cold here for bay and I treat rosemary as a summer crop and then dry or freeze it in the autumn.

    Would you have any tips how to grow a huge mint bush Liz? I’ve always wanted one, and my Mum tried several times to pot me mint, but I don’t know they always seem to die in my care. I have one growing now in memory of her, and it hasn’t died yet, but it’s only small still. I must be doing something wrong…. Would really appreciate any tips and advice you might have πŸŒΏπŸƒ

    My favourite herbs would probably be peppermint which I use daily for tea, parsley because it’s used in so many dishes & lavender because I just love it. Had not heard of sweet cicely so looked it up & it’s available from a couple of seed companies that I purchase from. One says to sow in seed tray & leave it in the fridge for a few weeks. I’ll have to try some.

    5 great herbs Liz !! i tend to like growing the herbs for the classic Bouquet Garni !! 3 sprigs of parsley, 2 sprigs of thyme, and a bay leaf.

    Wow I had no idea bay could grow in the soil in a colder climate, else I’d have planted it in my garden long ago! Do you leave it outside during winter, or how do you care for it in the cold months?

    Bay is great (2-3 leaves per gallon container top & bottom) in flours & grains to help repel weevils and other buggies.

    I love bronze fennel too! I have to try to overwinter rosemary inside as our winters are too cold in zone 5. There are 6 in my window now. Could I substitute bronze fennel for French tarragon I’m cooking?
